What's inside? Coconut cake + Lemon cream frosting

If you love coconut, this is for you.
The frosting has lemon zest so it gives you a little bit of tangy flavour
which goes well with my coconut cake.

Sometimes, I feel like a coconut drink. When I eat out with my hubby, I love to eat Pho.
They sell coconut drinks which I love..
Love coconut slices in it.
I might feel like pho because I can order coconut drinks!!

 I occasionally make coconut cakes.
What I love about it is the aroma..
When I bake it, there is sweety & coconutty aroma from the oven.
I enjoy this moment.. not last long but awesome!

Girl's Vanilla Cupcakes

Vanilla cupcakes + Cream Cheese Frosting
(Vanilla butter cream frosting available)

I made them for Emily's B-day. Very girly stlye.
I decorated cupcakes with pink sprinkles, glazed cherries, chocolate and marshmallow.
After I sent these to B-day party, I got good comments from parents, not kids!
Kids were so busy playing at the party, some didn't even know there were cupcakes.
Fortunately, parents had a chance to taste them.

I love Cream cheese frosting. It gives me deep & unique flavour to cupcakes.
For kid's B-day, it seems perfect to load cupcakes with lots of sweets
like jelly, chocolate, marshmallow and candy.
They love it!

Onebite Rockyroad Cupcakes

What's inside? Dark chocolate mud cake with Rockyroad toppings

Warning : Soooooo addictive!!


Dark choc mud cakes
70g dark chocolate,chopped
150g milk
90g butter, softened
200g brown sugar
2 eggs
2 Ts cocoa powder
100g self-raising flour
40g ground almond

Rockyroad topping
glazed cherries
chopped peanuts
flake almonds
shredded coconut

melted chocolate for decoration, optional

Why I love Cupcakes?

As a full-time mum, cooking and baking has brought me lots of joy and
fulfillment of my life.

Most of all, I CREATE something from nothing. It feels good as you all know.
Making cupcakes, cookies & pies..has become my favourite part of my daily life.

I wake up early in the morning because my daughter, Gemma,
always wake up at around 6a.m.
When she take a nap for one or two hours during the day,
 I usually make sweet things like cupcakes, brownies(my hubby's favourite), scones or pies.

I love having coffee in the morning with small dessert I made. Who wouldn't? big advantage of  baking is you can meditate yourself while baking.
When you get stressed out or feel gloomy,
bake your favourite sweet cupcakes or brownies. 
While making them, you will find yourself more relaxed..
(I sometimes use this meditation after fights with my hubby:-p It works!)
Most of all, you can have sweet, stress-free cupcakes!

Plus, you don't need to buy aroma stick or oil..
Baking itself brings you exciting aroma from the oven.
It is something which makes you happy.
